Early Potatoes are varieties that are harvested 70 days to 80-90 days after planting, similar to varieties Amandine or Belle de Fontenay. The immature tubers called new potatoes must be consumed quickly, as a side dish. They will be enjoyed with their very thin skin, without the need to peel them. In the garden, the harvest of new potatoes begins as soon as the leaves start to turn yellow, from June to the end of July depending on the planting date. Ideal for boiling or steaming, new potatoes can also be enjoyed stewed or fried.
