The Mesclun is a term of Niçoise origin meaning 'mixture'. In this case, it is a mixture of young salad leaves. This mixture combines, depending on the season, lettuce, rocket, chicory, lambs lettuce, spinach, purslane, or even chard and cabbage, etc. The combinations vary endlessly and are made according to the degree of sweetness, bitterness, crunchiness, and strength one wants to find.
