LeekAllium porrum – is a vegetable widely grown in the vegetable garden for its sheathing leaves or pseudo-stems. It is cultivated in two stages: sowing in a warm place and then transplanting as soon as the young plant reaches 15cm (6in). The seed germination is quite long, it can take 2 to 3 weeks. The white part that remains underground because it is earthed up during winter offers a very delicate flavour. Considered a winter vegetable like the very hardy 'Blue Solaise', it can be harvested all year round, but some varieties like the 'Jaune gros de Poitou' are only harvested in summer. This vegetable is rich in fibre, pro-vitamin A, and vitamin B.
