The Savoy Cabbage - Brassica olearacea var. Sabauda – of the Brassicaceae family is a species of cabbage cultivated for its leaves. It is a compound cabbage similar to the Savoy Cabbage Gros des Vertus displaying a crown of deeply crinkled leaves. This ancient vegetable often associated with winter is certainly hardy but can be grown in all seasons. It is appreciated raw in julienne in mixed salads, braised, stir-fried, accompanying meats, sausages or fish. Low in calories, it is rich in vitamins - C and B6 in particular - fibre and minerals such as calcium.
