Sweetcorn - Zea mays – from the Poaceae family, formerly known as the Gramineae, is cultivated in the vegetable garden for its grains gathered in cobs. When the bristle enveloping the cob turns brown, the grain is mature and can be harvested. It can be consumed grilled, steamed, or shelled in salads, popped, etc. To determine if the grain is ripe, crush a few: they should be slightly milky. Then, the sugar transforms into starch and the skin hardens and wrinkles. Sweetcorn, although sweet, has a moderate glycemic index. It is rich in vitamins B, C, and minerals. For those intolerant to gluten, it should be noted that Sweetcorn does not contain any.
