Pineapple sages (Salvia elegans) are aromatic plants prized for their foliage, which exudes a fruity pineapple note, and their bright red flower spikes late in the season. The standard pineapple sage, Salvia elegans ‘Ananas’, forms a soft clump 80 to 100 cm tall, with light green foliage which fresh leaves flavour infusions, fruit salads, desserts, or drinks. The ‘Tangerine’ variety has a similar habit and flowering, but its foliage develops a citrus aroma close to orange. The Salvia elegans ‘Golden Delicious’, particularly decorative, is distinguished by golden foliage that contrasts with its red flowers.
Not very hardy (-3/-5°C), these pineapple sages thrive in full sun, in light, well-drained soil, preferably cool in summer. They can be grown in pots to overwinter frost-free in cold regions.
