Corn Salad – Valerianella locusta – from the Caprifoliaceae family, also known as Lamb's Lettuce, is an herbaceous vegetable plant cultivated for its leaves. It has a delicate flavour and is consumed together with lettuces, chicories, and rocket salads in mixed salads. When cooked, it is prepared in the same way as spinach. It is originally a wild salad with spatulate, tender, fleshy foliage. It is rich in vitamin C, vitamin E, iron, and beta-carotene.
