Bell PepperCapsicum annuum – from the Solanaceae family are sweet peppers grown for their large, generally cubic and hollow fruit eaten as a vegetable. Originating from tropical climates in South America, they requires a lot of heat and light. They are a concentrated source of vitamins – particularly vitamin C and pro-vitamin A – and are consumed raw in colourful salads, grilled, stuffed, or pickled. A key ingredient in piperades, Basque chicken, ratatouilles, or caponatas. Peppers are the epitome of a summer vegetable.
