The Cauliflower - Brassica oleracea var botrytis - from the Brassicaceae family is an old vegetable-flower cultivated in the vegetable garden and consumed for its fleshy meristem before it blooms. This floral bud is generally white, like the Erfurt Snowball Cauliflower with a very delicate flavour, but now yellow, purple, or green varieties are appearing. Cauliflower seeds are sown under cover in pots or directly in the ground. It is said to be difficult to grow, but this is due to its lower tolerance to acidic soil pH.
