The Cauliflower - Brassica oleracea var botrytis - from the Brassicaceae family is an old vegetable-flower cultivated in the vegetable garden and consumed for its fleshy meristem before it blooms. This floral bud is generally white, like the Erfurt Snowball Cauliflower with a very delicate flavour, but now yellow, purple, or green varieties are appearing.
