Chicory – Cichorium endivia – from the Asteraceae family is a vegetable plant cultivated for its leaves and generally consumed raw in salads. The Wild Chicory resembles dandelion in its shape and flavour. As for the Cultivated Chicory, there are mainly two main categories: Curly Chicory and Escarole Chicory. The root is used to make the drink of the same name. This plant, with a rather bitter taste, is known to be a significant part of mesclun. The leaves are consumed cooked in juice, gratin, cream, or braised. Chicory also has purifying and anti-inflammatory properties.
