Orache, False Spinach – Atriplex hortensis – belonging to the Chenopodiaceae family, is a widely cultivated herbaceous plant in the Middle Ages. This leaf vegetable has been replaced by Spinach, with which it shares all the recipes in the kitchen. We are gradually rediscovering this plant, which is rich in minerals. With different colours, it can reach up to 2m (7ft) in height with astonishing speed. It is distinguished by its characteristic triangular leaves in the shape of a halberd. Easy to grow, Orache thrives in poor soils and performs remarkably well during episodes of high heat.
