The Tarragon or Dragon Herb - Artemisia dracunculus - is a perennial aromatic and culinary plant cultivated for the fragrance of its subtle and light leaves. This aniseed-flavoured herb can be used both fresh and dried. Sowing can be done under shelter in March or April, or in open ground from May to July as soon as the soil warms up. Very hardy, Russian Tarragon can withstand temperatures as low as -15°C (5°F). Tarragon, including Mexican Tarragon, prefers sunny locations and a rich, light, and well-drained soil. Its antioxidant and anti-allergic properties are well-documented.
