PurslanePortulaca oleracea – of the Portulacaceae family, is a fleshy herb cultivated in vegetable gardens for its crunchy leaves. It is a  creeping plant that forms cushions up to 15 cm (6in) high from which the tastiest young shoots can be taken. These can be eaten either raw in salads, cooked, or pickled in vinegar. Although this small herb can invite itself into the garden and take on the appearance of a weed, we shouldn't be fooled as this would mean denying ourselves a fantastic source of omega-3 and antioxidants. Purslane is highly drought-tolerant.
