Endive - Cichorium intybus var. Latifolium – from the Asteraceae family is a variety of Chicory cultivated for its leaves: the Witloof Chicory. Once uprooted and prepared, it is replanted in darkness. This is called forcing. This is how it obtains its beautiful white colour. This vegetable, widely cultivated in Belgium and northern France, is commonly called Chicon. Renowned for its freshness and slight bitterness, it is crispy in salads. Cooked, it can be enjoyed braised, with béchamel sauce, in gratins, etc. The Endive has purifying and laxative properties.
