Beetroot, Beta Vulgaris in Latin, belongs to the family Chenopodiaceae. It is a hardy biennial vegetable that can be harvested from the first year. Beetroots are grown for their fleshy roots, which can be consumed both cooked and raw. There are many varieties of beetroots; in addition to the traditional "red beetroot" are varieties with white flesh striped with pink, like the Chioggia beetroot, as well as yellow, orange, or pink varieties.
