Description

The long purple eggplant of Barbentane is an early, field-grown variety cultivated for its dark purple, elongated 25 cm fruits. Its flesh is eaten cooked, sautéed or stuffed and is an essential ingredient in ratatouille. Sow from February to April and harvest five months later.

The aubergine was introduced to Europe around the 14th century in Spain. It has been cultivated in India and China since ancient times. Aubergines can be eaten cooked, stuffed, in cream or au gratin dishes, and used in ratatouille. Aubergines have calming and diuretic properties and contain vitamins A, B1, B2, B5, C and PP, iron, and calcium.

Harvesting: Between July and October, aubergines are harvested as needed or when they are fully developed.

Storage: Aubergines can be stored for up to a week in the vegetable compartment of the fridge. Once steamed, they can be kept in the freezer for 6 to 8 months.

A gardener's tip: Weed and hoe regularly. Trim the ends of the branches to make it easier for the fruit to swell.

Planting and care

Sowing

Aubergines need well-rotted compost (3 kg/m²) in late autumn or early spring before sowing. The seeds should be sown in pots filled with fine potting soil in a warm spot in the house from February onwards, with plenty of light. From April onwards, you can sow in the open ground in the final location. Keep the substrate moist. To encourage growth, allow the seeds to sit in the bottom of the refrigerator for several days at a temperature of 4 to 5°C.

Care

When the plants have 5 or 6 leaves, transplant them into pots of potting soil or the ground in a warm spot. Remove the side shoots and pinch the plant when it has formed 2 or 3 bunches of flowers to create branches. Remove any suckers that develop at the base of the plant, as they tend to exhaust the plant unnecessarily. A good mulch will keep the soil moist and reduce the need for weeding.
