Description
La Mertensia maritima est parfois appelée Huître végétale en référence au goût surprenant de ses feuilles légèrement bleutées. Il s'agit d'une plante herbacée vivace et rampante, atteignant 15 cm de hauteur pour 50 cm de largeur. Elle se cultive en pleine terre ou en pot. Plantez-la au printemps ou à l'automne et récoltez au fur et à mesure des besoins.
La Mertensia maritima appartient à la famille des Boraginacées, comme la Bourrache, mais son goût iodé est plus prononcé. Cette plante poussant spontanément dans les dunes est aujourd'hui protégée. C'est une plante herbacée, rampante, au feuillage bleu vert. Elle offre en été des fleurs de couleur bleu violet en clochette. Très décorative, la Mertensie maritime se plante au jardin d'ornement comme au potager. Cette plante vivace et très rustique reste en place pendant plusieurs années, bien que son feuillage disparaisse en hiver. Elle a besoin d'une terre parfaitement drainée. Vous pouvez aussi la cultiver en pot.
Côté cuisine, les feuilles au goût d'huître se consomment généralement crues, et apportent une touche d'originalité aux plats de poissons ou aux salades.
La récolte : Elle s'effectue au fur et à mesure des besoins.
La conservation : les feuilles fraîchement cueillies se conservent quelques jours au réfrigérateur. Elles se conservent également dans du vinaigre comme les salicornes.
Le petit truc du jardinier : Si vos plants sont dévorés par les escargots et les limaces, installez à proximité de la cendre ou du marc de café, à renouveler en cas de pluie.

La plantation s'effectue au printemps (de mars à mai) ou à l'automne (septembre-octobre). La Mertensia maritima apprécie les emplacements à mi-ombre ou au soleil léger. Elle se plaît dans les sols riches, frais, parfaitement drainés, à tendance sableuse. Si votre terre est lourde, apportez un peu de sable au moment de la plantation.
En pleine terre : Apportez du compost quelques mois avant la plantation, par griffage sur 5 cm après avoir bien décompacté le sol. Creusez un trou (3 fois le volume de la motte) et installez au fond quelques graviers pour faciliter le drainage. Recouvrez d'un peu de terre, placez la motte et recouvrez à nouveau de terre fine. Tassez et arrosez. Au cours de la culture, l'arrosage se fait essentiellement en été.
En pot : prenez un pot large (50 cm de diamètre) et installez au fond un lit de graviers ou de billes d'argile, pour faciliter le drainage. Remplissez le pot avec un mélange de terreau et de sable. Placez la motte, recouvrez de terre et tassez bien. Arrosez. Au cours de la culture, arrosez modérément, essentiellement en été, sans laisser d'eau stagner dans la soucoupe. Rentrez le pot en serre froide ou véranda avant les gelées.
Coupez régulièrement les fleurs pour favoriser la production de feuilles.
