Description

Florence Fennel, sometimes called Provence Fennel, is a traditional variety that produces beautiful round bulbs, firm and very white, with a delicate aniseed flavour. The sowing period extends from April to June for a harvest from August to March.

Fennel belongs, like Carrot and Dill, to the Apiaceae family (formerly Umbelliferae) and forms a beautiful plant with fine and light foliage, whose branches, "bulb," and seeds are all consumed. It prefers mild climates and is cultivated in sunny, fairly rich soil.

Although easy to grow, Fennel is one of those very reactive plants that need a minimum of heat to grow but do not tolerate episodes of drought, which cause it to bolt quickly. The gardener's art consists in combining the right variety with the sowing period.

The bulbs (which are not really bulbs, this fleshy part being formed by the imbrication of the petioles) of Fennel have a beautiful pearly white colour and a slightly aniseed flavour. It is a vegetable with a delicate flavor that can be consumed both raw and cooked. Its branches are particularly used to flavor fish dishes. Finally, if unfortunately some plants bolt, console yourself, as fennel seeds are a very good condiment that aids digestion.

 

Harvest: Fennel is harvested about three months after sowing and is done as needed.

 

Storage: It is a fairly cold-sensitive plant that cannot withstand frost. It cannot remain in the ground during winter and must be stored in a cellar. Freshly harvested, Fennel can be stored for a few days in the refrigerator or for several months in the freezer after being blanched beforehand.


Gardener's tip: To limit watering, we recommend, starting from the end of May, mulching the soil with thin successive layers of clippings, if possible mixed with dead leaves. This protection, which keeps the soil moist, also reduces weeding.

Planting and care

Sowing:

Fennel germination occurs at a minimum temperature of 12 °. It usually takes between 8 and 10 days for the seedlings to emerge. The sowing period extends from April to July for a harvest from August to March.

Sowing can be done as early as March under cover, in containers filled with good seed compost, or from April to May directly in well-warmed soil. The seeds are buried at a depth of 1cm (0in) and sown 5cm (2in) apart in rows spaced 40cm (16in) apart. One month after emergence, it is necessary to thin out the seedlings, keeping only one plant every 15 to 20cm (6 to 8in).

If sowing was done in a nursery, the plants will need to be "dressed" (part of the foliage is cut off) before being transplanted to the garden, following the same planting distances as for sowing (15 to 20cm (6 to 8in) between plants in rows spaced 40cm (16in) apart).

 

Cultivation:

Fennel thrives in sunny, humus-rich soil. If compost is needed, it is best applied in autumn, in the form of well-rotted compost (about 3kg per m2) by raking it in to a depth of 5cm (2in), after loosening the soil as is done for all vegetable crops.

To obtain nice white bulbs, fennel can be earthed up to a height of 15cm (6in).

In the vegetable garden, fennel is not a good companion and only gets along with celery.

Don't hesitate to let some plants go to flower, as like all umbellifers, they are very pretty and highly appreciated by beneficial insects.
