Shelling BeansPhaseolus vulgaris – are grown in vegetable gardens exclusively for their seeds. The pods are harvested when fully mature as soon as they start to turn yellow, the seeds are eaten fresh or semi-dried. Wait until the pods are completely parchment-like and dry if harvesting dry bean seeds. These can then be stored for a long time and can only be consumed cooked. There are many traditional dishes for shell beans: the south-western France Cassoulet, South American Chilli con carne, or flageolet beans, to name just a few.
