Description

Salva officinalis is an aromatic and medicinal subshrub, about 50 cm (20in) tall. Sage is cultivated for its foliage, used fresh or dried to flavour stews, grills, soups, meats. It is also used for infusions.

Sowing from March to July for a harvest from July to December the following year.

The medicinal virtues of sage have been known about since antiquity. The Greeks and Romans used it against snake bites. The Egyptians appreciated its virtues for embalming their deceased.

Fresh or dried leaves are used to flavour stews, fish, poultry, game, vegetables, and pasta. They have antiseptic, bactericidal, digestive, and tonic properties. Sage contains an essential oil.

Sage is easy to grow, it simply requires a supply of well-rotted compost (3 kg/m²) in late autumn or early spring.

Harvest: Leaves are harvested from April to October by simply cutting the branches.

Storage: Dry the branches in the shade and store them in a dry place.

Gardener's tip: Maintain with regular weeding and hoeing.

Planting and care

Sowing

Sow broadcast or in rows spaced 80 cm (32in) apart. Thin out the young plants when they reach 10cm (4in) and keep one every 40cm (16in).

Maintenance

Regularly perform hoeing and weeding. Water moderately.
